Art and Sciences Competition

This is a recipe redaction challenge and bake off!

Tart de Bry is a 14th century recipe. This is taken from ‘The Forme of Cury’ of 1390, compiled by the Master Cooks of King Richard II:

Tart de Bry. Take a crust ynche depe in a trap. Take yolkes of ayren rawe & chese ruayn & medle it & þe yolkes togyder. Do þerto powdour gynger, sugur, safroun, and salt. Do it in a trap; bake it & serue it forth.

Recipes from medieval sources generally do not contain specific measurements and quantities but are usually sufficiently explained that a competent cook will be able to prepare them. Ingredients aren’t always listed in the order they’re used, they might be missing entirely! Often no measurements or timings, and even cooking methods can be vague. Medieval recipes were more likely memory aids than precise instructions; a medieval cook might also be cooking for anywhere between 10 to 1,000 guests, so quantities weren’t necessarily useful.

Your mission, should you choose to accept it, is to research, interpret and create your version of this dish.

Documentation of your entry and your redacted recipe is encouraged but not required. At a minimum – a list of ingredients is required (for allergen identification).

Following judging – the populace will be able to partake in your creations.
